1 kg firm white fish fillets (skin removed)
Steam fish in a little water, salt, pepper and lemon juice till done, but still firm. When cold, flake and marinate in the following sauce.
Ingredients for sauce :
1/ 2 cup cream
1 cup mayonnaise
1/4 cup tomato sauce
1 tsp Worcestershire sauce
1 small grated onion
1 tsp dry mustard
Tabasco and pepper to taste
Combine these ingredients and gently fold in the cold, flaked fish. Serve in seafood glasses garnished with lettuce and lemon wedges.

Is it important to use larger portions to get a nice flake or will small ones have the same affect. I bought small as large were not available
Small ones will have same effect – proportion sauce accordingly 😊
