Two-Ingredient Banana Pancakes

I’m all for easy so when I saw this recipe I had to give it a try. The texture is delicate and airy. Cook over medium heat and flip with a very thin spatula for best results. I used my Ikea flipper which was a bit too thick and couldn’t quite get it to flip the whole pancake in one go. Even so, it tastes good and I folded it to look like a crepe (to hide the broken middles), dusted it with confectioner’s sugar, added more banana and a couple dollops blueberry jam.

Ingredients:

Vegetable oil as needed
2 large eggs
1 ripe medium banana


Directions:

1. Heat a skillet over medium heat and add some oil.
2. Blend the eggs and banana in a blender until very smooth, 30 seconds to a minute.
3. Pour the banana mixture in the hot skillet and cook for 1 minute. Flip and cook another minute.

Serve immediately.
